A little Ukraine with your chicken
Note: This is a guest post from Christina.
This recipe from the family cookbook comes to us from my Aunt Chrissy. She contributed several goodies, including this recipe for Chicken Kiev. My Aunt Chrissy died when I was in high school, so this meal had some meaning beyond just the taste. It was nice to open the cookbook and see her handwriting. And although I don't remember my Aunt Chrissy ever preparing this for me in particular, it did bring me back to dining at her house in her fancy dining room.
Bobby actually made this meal. Despite the name, it's not that fancy. Basically chicken rollatini, kept moist with a layer of butter on the inside. And boy was it moist! Who says chicken has to be dry? Obviously not the Ukrainians! (Kiev, according to Wikipedia, is Ukraine's largest city; why that city gets credit for this particular preparation of chicken, I have no idea).

Country Chicken Jamboree
This is the Country Chicken Medley offered by my sister, Jennie Davis. Chicken, Potatoes, and corn: what could be bad?
The breading for the chicken includes a little graham cracker, makes for an interesting flavor. It's baked, so it stays nice and juicy without getting heavy.

Daily Happy: Shameless Dad Blog
Had another wonderful weekend with the family. Went for a hike on the Nipmuk trail through Mansfield and then back along the levee surrounding the hollow reservoir. Robby especially loved it!
And it was mother's Day, so what better way to show mommy how much we love her than with a big hug!

Christina gave Robby his final bath in the sink this weekend. We decided he's getting a little too big for it. Time for full time transition to the tub (for the tubbs!)

Orzo, Orzo, Orzo!
Greek pasta and cheese that looks like Greek rice with cheese? It's confusing, but it's a whole lotta delicious. Coming at you from Chrissy Proper--this is one modern Greek assembly that won't cause a protest.
Surprisingly light and fluffy, even with a good helping of feta.

It's Swim Time...
Christina and I took Robby to his first swim calls on Saturday. Robby was a bit overwhelmed by all the people and the noise, but he kicked and splashed as best he could. He was especially happy with wall hanging and "chasing" after a ball.Here are the pics that mommy took while daddy and baby played around:

Climbing Boston Hollow
We went Hiking today in Boston Hollow--took Robby in the baby pack. Had a great time. There was a fire recently, and the underbrush was burned out in spots. Man Made, happened during the dry spell last month. The Ashford fire department put it out--good job gentlemen.
